You are missing the point of the fic, which is about Adair coming to accept Grisia, not about Adair finding out about Grisia's faults. That would be an entire story in and of itself!
Regardless, I also disagree with your assessment of what Grisia would and would not do, but you're free to interpret Grisia as you wish.
Here's my interpretation. Grisia is very careful with his words, yes, but he doesn't always keep that up. People just pretend he does. Storm knows Sun's many faults, but because we see Legend of Sun Knight from Grisia's POV, 1st person even, we don't see the entire picture. Grisia is an unreliable narrator. When we have other POVs, we see that Grisia hasn't kept his true personality hidden as well as he thought he does. If you've read Ecilan's side story "Sweet Smile," Ecilan even hears Grisia mutter under his breath about always needing to smile. At the end of volume 1, the other Twelve Holy Knights gather for a meeting, and they clearly know that Grisia knows how to use magic and is entirely a handful, but they don't tell that to his face. Blaze pretty much knew Grisia = Supreme Dragon, but in Grisia's narration of the events, he thought Blaze probably didn't know. In volume 2, we see Grisia treat his platoon fairly bluntly. Grisia does indeed act differently around his platoon. He might not have acted that way with them from the start, but he does start doing it. They learn that he's not benevolent like the rumors.
You say that Grisia wouldn't harm his holy knights. He certainly wouldn't hurt them lethally, but Grisia holds grudges like none other, and he's not afraid to prank people or to teach a lesson as long as he can fix it. He has mentioned pushing his platoon off cliffs just to train them. My interpretation is that no one else may hurt them because they're his, but he may treat them as he wishes.
Of course Grisia can win against a dog, but that doesn't mean he likes dogs, or that he wants to do it himself. He had Judgment doing it for him even after they started training. He has Judgment buying pies for him too. Will you say that Grisia can totally buy pies himself? Of course he can, but that doesn't mean he wants to. He likes making other people do things for him.
Perhaps your interpretation is different. If you disagree, feel free. This, however, was the interpretation used for this fic. I don't expect you to agree with it. If you wish for me to explain more about my interpretation, feel free to ask.
